Is there anyway that the gallery template can be changed once a new gallery has been made?
I am looking to change one of my galleries from horizontal to rounded, is this possible without having to start a new gallery?

Yes, you have possibility to change horizontal gallery type to rounded.
For this you need to go to Main tab of Gallery Settings and find Image radius option.
Set it on 100% (or what you want).
